Cookies For Days

Lauren and her two chicks made over 150 cookies last weekend to hand out at Forever Young Chiropractic's annual Spirit Day! It was a big job that she couldn't do without her elf helpers. Lauren's girls are both sensitive to diary, so in her house - non-dairy recipes are top-notch!


Years ago, a friend of the Lauren's showed her Vegan Crinkle Cookies and the recipe stuck with her. This one may not be identical but the vegan chocolatey goodness still melts in the mouth just riiiiight.


Chocolate Crinkle Cookies (Recipe makes 50 Cookies at least)


Ingredients

3 cups granulated sugar

1 cup canola or coconut oil

3 tbsp ground flax seeds

1 cup non-dairy milk

3 tsp pure vanilla extract

3 3/4 cups of all purpose flour

1 1/2 cups cocao powder

3 tsp baking powder

3/4 tsp salt

3 cups powdered sugar for rolling



Method

  1. Preheat oven to 350 degrees, or 325 if you opt for smaller cookies.

  2. In a large bowl, add sugar and oil and mix well with a wooden spoon. Add in flax seed, non-diary milk and vanilla and continue to mix well.

  3. In a separate bowl, combine flour, cocoa powder, baking powder and salt.

  4. Sift flour mixture into the liquid mixture and stir until think chocolate dough forms.

  5. scoop out heaping table spoons (Lauren opted for heaping 1/2 tablespoons and made approximately 75 cookies per batch)

  6. roll dough into a ball and roll in generous amounts of sugar

  7. Bake for 9-10 minutes. Cool for 10 on baking sheet and another 10-15 on wire rack

  8. Enjoy, and maybe leave a few out for the Big Guy ;)
